Stifado

A traditional Greek beef stew from the Ionian islands, slow-cooked with whole pearl onions, tomatoes, red wine, and cinnamon. The small onions remain intact and sweet, while the beef becomes meltingly tender in a rich, aromatic sauce.

Preparation

  1. Step 01

    Season the beef with salt and pepper.

  2. Sear

    Heat the olive oil in a heavy Dutch oven over medium-high heat. Sear the beef in batches on all sides until deeply browned. Remove and set aside.

  3. Sauté

    In the same pot, sauté the peeled pearl onions over medium heat for 5–6 minutes, stirring occasionally, until lightly golden.

  4. Reduce

    Return the beef to the pot. Pour in the red wine and bring to a boil over high heat until the liquid is reduced by about half.

  5. Step 05

    Add the diced canned tomatoes, beef stock, cinnamon stick, bay leaves, and allspice berries. Stir well.

  6. Simmer over low heat

    Cover the pot and simmer over very low heat for 90 minutes, until the meat is fork-tender. Stir occasionally.

  7. Step 07

    Remove the cinnamon stick and bay leaves. Stir in the red wine vinegar and season with salt and pepper. If needed, thicken the sauce by simmering uncovered for a few more minutes.
