Preparation

  1. Step 01

    Combine the red lentils, bulgur, and rice in a colander and rinse thoroughly under running water. Continue rinsing until the water runs clear.

    In a large pot, melt the olive oil and butter over medium heat. Add the diced onion and sauté until softened and lightly golden, about 3-4 minutes.

    Add the tomato paste and continue sautéing for about 1 minute, until fragrant.

    Add the rinsed lentils, bulgur, and rice to the pot. Pour in the hot water and stir.

    Bring the soup to a boil, then reduce the heat. Cook on low heat for about 20-25 minutes, until the lentils and grains are completely tender. Stir occasionally.

  6. Step 06

    Add the salt, black pepper, and red pepper flakes, and stir. If desired, use a blender to purée half of the soup for a smoother consistency.

  7. Step 07

    Ladle the soup into bowls. Sprinkle with dried mint and serve with a lemon wedge.
