Traditional German Falscher Hase is a meatloaf made from ground meat and shaped like a rabbit. This meatloaf, stuffed with hard-boiled eggs, is wrapped in bacon strips, baked in the oven, and served with a meat sauce.

Place the bread crumbs in a bowl and pour the milk over them. Let them soak for 10 minutes until softened.
Melt 20 g of butter in a skillet and sauté the finely chopped onion for 5 minutes until softened and lightly golden. Let cool.
In a large mixing bowl, combine the ground meat, softened bread crumbs, sautéed onion, raw egg, mustard, chopped parsley, salt, and black pepper. Knead until all ingredients are evenly combined.
Spread half of the mixture into a rectangle on a sheet of parchment paper. Place the hard-boiled eggs side by side in the center. Cover with the remaining mixture and press the edges firmly to seal. With wet hands, shape the mixture into an oval log resembling a rabbit's body.
Wrap the bacon strips diagonally around the meatloaf. Grease a baking dish with the remaining 30 g of butter and place the meatloaf in the center of the dish.
Bake in a preheated oven at 180°C (conventional) for approximately 60 minutes. Halfway through the cooking time, remove from the oven and baste the meatloaf with the rendered fat using a spoon.
Remove the meatloaf from the baking dish and transfer to a serving platter. Stir and cook the remaining fat and flour in the dish, add the beef stock, and simmer for 5 minutes until the sauce has thickened.
Let the Falscher Hase rest for 10 minutes, then slice and serve with the sauce.
