Preparation

  1. Step 01

    Place the bulgur in a sieve and rinse under cold water until the water runs clear, then drain well.

  2. Medium heat, 5 minutes

    Melt the butter over a medium heat, add the finely chopped onion and sauté for approximately 5 minutes, until translucent.

  3. Medium heat, 1-2 minutes

    Add the tomato paste and cook, stirring, for 1-2 minutes, until fragrant.

  4. Medium heat, 2 minutes

    Add the drained bulgur and sauté, stirring, for 2 minutes, to coat the grains in the butter and tomato paste.

  5. Step 05

    Add the hot water (or chicken stock), salt, black pepper and the optional chopped green pepper. Stir once.

  6. Low heat, covered, 15-18 minutes

    Bring to the boil, then reduce the heat, cover the pan with a lid and cook over a low heat for 15-18 minutes, until the liquid has been absorbed.

  7. Resting, 10 minutes

    Remove from the heat and leave to rest, with the lid on, for 10 minutes.

  8. Step 08

    Remove the lid and fluff with a fork to separate the grains, then serve hot.
