Peel the onions and cut crosswise into slices approximately 1 cm thick. Gently separate the slices into individual rings. Discard or use elsewhere any very small inner rings.
Mix the flour, cornflour, paprika powder, garlic powder, salt and pepper on a shallow plate.
Whisk the eggs and milk together on a second shallow plate using a fork.
Pour the panko breadcrumbs onto a third shallow plate.
Coat each onion ring first in the flour mixture, shaking off any excess, then dip in the egg and milk, and finally coat in the panko, pressing gently so the coating adheres well.
Preheat the air fryer to 200 °C (approx. 3 minutes).
Place a maximum of 4–5 coated rings in a single layer in the basket (do not overlap). Lightly spray all over with oil.
Bake at 200 °C for approx. 5–6 minutes, until the underside is golden.
Carefully turn the rings using tongs and bake for a further 5–6 minutes, until both sides are evenly golden and crispy.
Transfer the finished onion rings to a wire rack and allow to cool briefly. Repeat the process with the remaining rings in 3 further batches.
