Combine the flour, cornstarch, paprika, garlic powder, salt, and pepper on a shallow plate.
Whisk the eggs and milk together with a fork on a second shallow plate.
Pour the panko breadcrumbs onto a third shallow plate.
Coat each onion ring first in the flour mixture, shaking off any excess, then dip in the egg wash, and finally press into the panko, pressing lightly so the coating adheres well.
Preheat the air fryer to 200 °C (about 3 minutes).
Place a maximum of 4–5 breaded rings in a single layer in the basket (do not overlap). Lightly spray all sides with oil.
Bake at 200 °C for about 5–6 minutes, until the bottom is golden brown.
Carefully flip the rings with tongs and bake for another 5–6 minutes, until both sides are evenly golden brown and crispy.
Transfer the finished onion rings to a wire rack and let cool briefly. Repeat with the remaining rings in 3 additional batches.
