Tarhana soup, one of the indispensable soups of traditional Turkish cuisine, is prepared by dissolving fermented tarhana in water and cooking it with butter and tomato purée. This thick, slightly sour and nourishing soup is a warm companion to Turkish tables during the winter months.

Preparation

  1. dissolving in cold water

    Place the tarhana in a wide bowl. Gradually add 1 glass of cold water, whisking or stirring with a spoon until no lumps remain. You should achieve a smooth consistency.

  2. Sautéing

    Melt the butter in a large saucepan over a medium heat. Add the tomato purée and cook for 1 minute, stirring.

  3. simmering

    Add 5 glasses of water (or chicken stock) to the pan and bring to the boil.

  4. slowly adding and stirring

    Once the water has come to the boil, reduce the heat. Slowly pour the dissolved tarhana mixture into the pan in a thin stream, stirring constantly. Do not stop stirring.

  5. cooking over low heat

    Cook the soup over a low heat, stirring frequently, for 12–15 minutes. It will thicken. Add the salt and pepper and stir.

  6. serving

    Ladle the soup into bowls. Sprinkle with dried mint and chilli flakes and serve hot.
