Preparation

  1. dissolving in cold water

    Place the tarhana in a wide bowl. Gradually add 1 cup of cold water, whisking or stirring with a spoon until no lumps remain. You should achieve a smooth consistency.

  2. Sautéing

    Melt the butter in a wide pot over medium heat. Add the tomato paste and sauté for 1 minute.

    Add 5 cups of water (or chicken stock) to the pot and bring to a boil.

  4. adding slowly and stirring

    Once the water has come to a boil, reduce the heat. Slowly add the dissolved tarhana mixture to the pot in a thin stream, stirring constantly. Do not stop stirring.

  5. cook over low heat

    Cook the soup over low heat for 12-15 minutes, stirring frequently. The consistency will thicken. Add the salt and pepper and stir.

  6. serving

    Ladle the soup into bowls. Garnish with dried mint and red pepper flakes and serve hot.
