Preparation

  1. Bring to a boil and simmer over medium heat.

    Wash the beets and place them in a large pot, covering with water. Add the vinegar, sugar, and salt.

    Drain the beets, rinse briefly with cold water, and peel the skin off with your hands or a knife. Then slice or dice them.

  3. Gently warm the cream, then stir in the horseradish and let it steep for 5 minutes.

    Finely grate the peeled horseradish. Gently heat the cream in a small saucepan (do not boil), stir in the grated horseradish, vinegar, and sugar, and let it steep briefly.

  4. Toss in butter over medium heat.

    Melt the butter in a skillet and gently toss the beet slices over medium heat for 3–4 minutes, until they are lightly glazed. Season with salt.

    Arrange the tossed beets on a warmed platter and pour the horseradish sauce over them or serve on the side.
