Wash the jalapeños, pat dry, and halve them lengthwise. Using a small spoon, completely remove the seeds and white membranes. Place the halves cut-side up on a cutting board.
In a bowl, stir together the cream cheese, shredded cheddar, salt, and garlic powder until smooth, using a spoon or hand mixer.
Fill the jalapeño halves with the cheese mixture using a small spoon or piping bag, and lightly smooth the surface.
Set up three shallow dishes: one with flour, one with the beaten eggs, and one with panko breadcrumbs.
Working one at a time, coat the stuffed jalapeño halves first in flour (shake off excess), then dip in the beaten egg, and finally coat evenly with panko breadcrumbs. Press lightly so the coating adheres.
Preheat the air fryer to 180 °C on conventional heat.
Place the breaded poppers in the air fryer basket in a single layer, filling-side up, without overlapping. Bake at 180 °C for 8 minutes, carefully flipping after 4 minutes. If using a smaller basket, cook in two batches of 8 halves each.
