Melt the butter in a wide saucepan. Add the pine nuts and sauté over low heat until golden. Transfer to a plate.
In the same saucepan, add the finely diced onions and sauté until softened and translucent.
Add the drained rice and sauté for 2-3 minutes, until the grains are coated with butter.
Add the hot water, salt, allspice, cinnamon, and black pepper. Stir once and bring to a boil.
Once boiling, reduce the heat to the lowest setting, cover, and cook for approximately 15 minutes, until the water has been absorbed.
Remove from heat. Add the currants, toasted pine nuts, chopped mint, and dill. Cover and let rest for 10 minutes.
Fluff the rice with a fork to mix, then transfer to a serving platter.
