Cut the pork shoulder into uniform 2–3 cm cubes and place in a large bowl.
For the marinade, stir together the olive oil, lemon juice, chopped garlic, oregano, salt, and pepper in a small bowl until the salt has dissolved.
Pour the marinade over the meat cubes and toss well to coat each piece evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours (overnight is best).
Soak the wooden skewers in cold water for 30 minutes so they don't burn on the grill.
Thread the marinated meat cubes onto the skewers, leaving a small gap between pieces so the heat can circulate evenly. Use about 4–5 pieces per skewer.
Grill the skewers on a preheated grill or grill pan over medium-high heat for 10–12 minutes, turning every 3 minutes, until the meat is lightly browned on the outside and cooked through on the inside.
Remove the souvlaki from the grill, let rest for 2 minutes, and serve traditionally with pita, tzatziki, tomato slices, and raw onion rings.
