Cut the chicken breast into uniform bite-sized pieces, approximately 3–4 cm in size.
Whisk together the flour, paprika, salt, and black pepper in a shallow plate.
Beat the eggs with a fork in a second bowl.
Combine the panko, garlic powder, and onion powder in a third shallow plate.
Coat each piece of chicken in the seasoned flour, shaking off any excess, then dip in the beaten egg, and finally press firmly into the panko on all sides.
Preheat the air fryer to 200 °C and let it run for 3 minutes.
Place the breaded nuggets in a single layer in the air fryer basket and spray evenly with cooking oil.
Cook the nuggets at 200 °C for 5 minutes.
Turn the nuggets with tongs so they brown evenly.
Cook for an additional 5 minutes at 200 °C, until the nuggets are golden brown and cooked through (internal temperature 74 °C).
Remove the cooked nuggets and let them rest briefly on a plate. Cook the remaining nuggets in a second batch in the same way.
