Preparation

  1. simmering

    Bring a large pan of water to the boil and add the salt. Cook the pasta according to the packet instructions until al dente. Reserve a mug of the pasta water.

  2. Sweating over a low-medium heat

    While the pasta is cooking, add the olive oil to a large frying pan and heat over a medium-low heat. Add the thinly sliced garlic. Gently sweat the garlic until golden, being careful not to let it burn. Then add the chilli flakes and toss for a further 30 seconds.

  3. Tossing to coat

    Transfer the cooked pasta to the pan. Add half a cup of the reserved pasta water. Over a medium heat, toss continuously until the pasta is well coated in the sauce. Once the water has evaporated and the sauce has turned creamy, remove from the heat.

  4. Step 04

    Plate up and scatter generously with freshly chopped parsley. If desired, drizzle over a few drops of extra virgin olive oil.
