Bring a large pot of water to a boil and add salt. Cook the pasta al dente according to package directions. Reserve one cup of the pasta water.
While the pasta cooks, add olive oil to a large skillet and heat over medium-low heat. Add the thinly sliced garlic. Sauté slowly until the garlic turns golden; be careful not to burn it. Then add the red pepper flakes and stir for 30 more seconds.
Transfer the cooked pasta to the skillet. Add half a cup of the reserved pasta water. Over medium heat, stir continuously to coat the pasta with the sauce. Remove from heat once the water has evaporated and the sauce reaches a creamy consistency.
Plate and generously sprinkle with freshly chopped parsley. If desired, drizzle a few drops of extra virgin olive oil over the top.
