One of the most beloved pastries of traditional Turkish cuisine, minced meat tray börek is baked in the oven until golden, with a spiced minced meat filling layered between thin sheets of yufka. Crispy on the outside, soft and delicious within, this börek is an essential part of afternoon tea and special occasions.

Preparation

  1. sweating over medium heat

    Heat the olive oil in a frying pan. Add the finely chopped onion and cook for 3-4 minutes until softened. Add the minced meat and cook, stirring, until the colour changes. Add the salt, black pepper and chilli flakes and stir. Remove from the heat and leave to cool slightly.

  2. Melting over a low heat

    Melt the butter in a small saucepan over a low heat. Beat the egg in a separate bowl. Preheat the oven to 180°C.

  3. Step 03

    Grease a rectangular baking tray (30x40 cm) with a small amount of melted butter. Place the first yufka in the tray, allowing the edges to overhang, and brush with butter. Lay the second yufka on top and brush with butter again.

  4. Step 04

    Spread half of the prepared minced meat filling evenly over the yufka.

  5. Step 05

    Lay the remaining yufka sheets on top, one at a time. Brush each layer with butter. Brush the top yufka sheet with butter as well.

  6. Step 06

    Fold the overhanging edges of the first yufka sheet inwards over the top of the börek. Brush the top with the beaten egg.

  7. oven roasting

    Cut the börek into diamond or square shapes with a sharp knife. Bake in the preheated 180°C oven for 35-40 minutes until golden on top. Remove from the oven and leave to rest for 10 minutes.
