Ground Beef Börek – Traditional Turkish Tray Börek

One of the most beloved pastries of traditional Turkish cuisine, ground beef tray börek is made by placing a spiced ground beef filling between layers of thin yufka and baking until golden brown. Crispy on the outside, soft and flavorful on the inside, this börek is an absolute must for tea time and special occasions.

Preparation

  1. sauté over medium heat

    Heat the olive oil in a skillet. Add the finely chopped onion and sauté for 3-4 minutes until softened. Add the ground beef and cook, stirring, until browned. Add the salt, black pepper, and red pepper flakes and stir to combine. Remove from heat and let cool slightly.

  2. Melt over low heat

    Melt the butter in a small saucepan over low heat. In a separate bowl, beat the egg. Preheat the oven to 180°C.

    Grease a rectangular baking pan (30x40 cm) with a small amount of melted butter. Place the first yufka in the pan with the edges hanging over the sides, and brush with butter. Lay the second yufka on top and brush with butter again.

    Spread half of the prepared ground beef filling evenly over the yufka layers.

  5. Step 05

    Lay the remaining yufka sheets on top, one at a time. Brush each layer with butter. Brush the top yufka sheet with butter as well.

  6. Step 06

    Fold the edges of the first yufka that are hanging over the pan inward to cover the top of the börek. Brush the top with the beaten egg using a pastry brush.

  7. baking

    Cut the börek into diamond shapes or squares with a sharp knife. Bake in the preheated 180°C oven for 35-40 minutes, until the top is golden brown. Remove from the oven and let rest for 10 minutes.
