In a medium saucepan, bring the chicken stock, milk and salt to the boil.
Slowly whisk the grits into the boiling liquid. Reduce the heat and cook, stirring frequently, for approximately 20 minutes until the grits are creamy in consistency.
In the pan with the reserved bacon fat, cook the garlic over medium heat for 1 minute until fragrant.
Add the prawns and cayenne pepper to the pan. Cook for approximately 2–3 minutes on each side until the prawns turn pink and curl up.
Add the butter, lemon juice and hot sauce to the prawns. Toss the pan until the butter has melted and the sauce coats the prawns.
Add black pepper to the cooked grits and stir well.
Divide the creamy grits among plates. Top with the prawns and their sauce. Garnish with crumbled crispy bacon pieces and thinly sliced spring onions to serve.
