Pilaf

A classic butter pilaf, one of the cornerstones of Turkish cuisine. A traditional pilaf made with Baldo rice, orzo, and chicken stock, with perfectly separated grains enriched by the aroma of butter.

Preparation

  1. Step 01

    Place the rice in a wide bowl and add enough cold water to cover. Gently stir with your hand, then drain. Repeat this process 3-4 times until the water runs clear.

    Add lukewarm water and 1 teaspoon salt to the washed rice. Leave for 20 minutes, then drain in a sieve and allow to rest for 10 minutes.

    Melt the butter in a wide-based saucepan over medium heat. Add the orzo and fry, stirring constantly, for 2-3 minutes until golden.

    Add the drained rice. Fry the rice with the orzo for 2-3 minutes; the grains will begin to turn translucent.

    Add the hot chicken stock and remaining salt. Stir once and bring to the boil.

    Once boiling, reduce the heat to the lowest setting. Cover the saucepan and cook for 15 minutes.

  7. Step 07

    Turn off the heat. Without opening the lid, place a clean tea towel over the saucepan and replace the lid. Leave to rest for 15 minutes.

  8. Step 08

    At the end of the resting time, fluff the pilaf with a fork, lifting from the bottom to the top. Take care not to break the grains.
