A classic butter pilaf, one of the cornerstones of Turkish cuisine. A traditional pilaf made with Baldo rice, orzo, and chicken broth, with perfectly separate grains enriched with the aroma of butter.

Preparation

  1. Step 01

    Place the rice in a large bowl and add enough cold water to cover. Gently stir with your hand, then drain. Repeat 3-4 times until the water runs clear.

    Add lukewarm water and 1 teaspoon of salt to the washed rice. Let it soak for 20 minutes, then drain in a colander and let it rest for 10 minutes.

    In a wide-bottomed pot, melt the butter over medium heat. Add the orzo and toast, stirring constantly, until golden, 2-3 minutes.

    Add the drained rice. Toast the rice together with the orzo for 2-3 minutes; the grains will begin to turn translucent.

    Add the hot chicken broth and the remaining salt. Stir once and bring to a boil.

    Once boiling, reduce the heat to the lowest setting. Cover the pot and cook for 15 minutes.

  7. Step 07

    Turn off the heat. Without opening the lid, place a clean kitchen towel over the pot and replace the lid. Let it rest for 15 minutes.

  8. Step 08

    After the resting period, fluff the pilaf with a fork, lifting from the bottom to the top. Be careful not to break the grains.
