Mash the white cheese in a bowl with a fork. Add the finely chopped parsley and black pepper, and mix well.
Beat the egg in a small bowl. Keep it ready for sealing the edges.
Cut each sheet of filo pastry into four, then cut each piece in half to form triangles. You should have 16 triangles in total.
Place a teaspoon of the cheese filling along the wide edge of each triangle. Starting from the wide edge, roll up tightly towards the pointed tip.
Dip the pointed tip of the roll in the beaten egg to seal it. Press firmly so it does not come undone.
Heat the vegetable oil in a deep frying pan to 170-180 °C. To check that the oil is hot enough, drop in a small piece of filo pastry; if it bubbles immediately, it is ready.
Carefully place the börek in the oil. Fry for approximately 2-3 minutes, until golden on all sides. Do not overcrowd the pan; fry 4-5 at a time.
Remove the fried börek with a slotted spoon and place on a plate lined with kitchen paper to drain any excess oil. Serve hot.
