Mash the white cheese in a bowl with a fork. Add the finely chopped parsley and black pepper, and mix well.
Beat the egg in a small bowl. Set aside for sealing the edges.
Cut each phyllo sheet into quarters, then cut each quarter in half to form triangles. You should have 16 triangles in total.
Place a teaspoon of the cheese filling on the wide edge of each triangle. Starting from the wide edge, roll tightly toward the pointed tip.
Seal the pointed tip by dipping it in the beaten egg. Press firmly to prevent it from unrolling.
Heat the vegetable oil to 170-180 °C in a deep pan. To test if the oil is hot enough, drop in a small piece of phyllo; if it sizzles immediately, it's ready.
Carefully place the börek in the oil. Fry for about 2-3 minutes until golden on all sides. Don't overcrowd the pan; fry 4-5 at a time.
Remove the fried börek with a slotted spoon and place them on a plate lined with paper towels to drain excess oil. Serve hot.
