Rote Grütze, one of the most beloved traditional desserts of German cuisine, is a glossy red fruit dessert served cold, made by thickening red fruits such as raspberries, morello cherries, redcurrants and strawberries with cornflour. It is served with whipped cream or vanilla sauce.

Preparation

  1. Step 01

    Wash the raspberries, morello cherries, redcurrants and strawberries. Remove the stones from the morello cherries, halve the strawberries and strip the redcurrants from their stems.

    Place all the fruit, caster sugar and morello cherry juice in a wide saucepan. Bring to the boil over a medium heat, stirring, for 5–6 minutes; the fruit will soften and release its juices.

    In a separate bowl, mix the cornflour with cold water until smooth.

    Gradually pour the cornflour mixture into the simmering fruit in a thin stream, stirring continuously, and cook for a further 2–3 minutes. The mixture will thicken and become glossy.

    Remove the pan from the heat and leave to cool to room temperature. Then refrigerate for at least 20 minutes.

  6. Step 06

    Whip the cream with the vanilla sugar until thick. Divide the cooled Rote Grütze between bowls and serve topped with a spoonful of whipped cream.
