Preparation

  1. Step 01

    Wash the raspberries, sour cherries, currants, and strawberries. Pit the cherries, halve the strawberries, and stem the currants.

    Place all the fruit, granulated sugar, and cherry juice in a wide saucepan. Bring to a boil over medium heat, stirring, for 5-6 minutes; the fruit will soften and release its juices.

    In a separate bowl, whisk the cornstarch with cold water until smooth.

    Slowly pour the cornstarch mixture into the boiling fruit mixture in a thin stream, stirring constantly, and cook for 2-3 more minutes. The mixture will thicken and become glossy.

    Remove the saucepan from the heat and let cool to room temperature. Then refrigerate for at least 20 minutes.

    Whip the cream with the vanilla sugar until stiff peaks form. Divide the cooled Rote Grütze among bowls and serve with a spoonful of whipped cream on top.
