Boil the potatoes in their skins in salted water for approximately 20 minutes. Drain and leave to stand for 5 minutes, then peel and cut into slices approximately 5 mm thick.

Boil the potatoes in their skins in salted water for approximately 20 minutes. Drain and leave to stand for 5 minutes, then peel and cut into slices approximately 5 mm thick.
Dice the bacon into small cubes. Slice the onion finely into half-moons.
Heat the oil in a large frying pan over medium-high heat. Add the diced bacon and fry for approximately 3–4 minutes until crispy.
Remove the bacon from the pan and set aside. Place the potato slices in the same pan in a single layer. Cook for 4–5 minutes until golden, without stirring.
Flip the potatoes with a spatula. Add the butter and sliced onion. Cook for a further 4–5 minutes until the onion is softened and golden and the potatoes are browned on both sides.
Return the fried bacon to the pan. Add the salt, black pepper and mustard. Gently toss to combine all the ingredients.
Remove the pan from the heat. Garnish with finely chopped fresh spring onions and serve hot.
