Dice the bacon into small cubes. Slice the onion into thin half-moon shapes.
Heat the oil in a wide skillet over medium-high heat. Add the diced bacon and fry until crispy, about 3-4 minutes.
Remove the bacon from the pan and set aside. Place the potato slices in a single layer in the same pan. Cook without stirring until golden brown, 4-5 minutes.
Flip the potatoes with a spatula. Add the butter and chopped onion. Cook for another 4-5 minutes until the onions are soft and golden and the potatoes are browned on both sides.
Return the fried bacon to the pan. Add the salt, pepper, and mustard. Gently toss to combine all the ingredients.
Remove the pan from the heat. Garnish with finely chopped fresh chives and serve hot.
