Traditional German split pea stew made with yellow split peas, smoked pork, potatoes and root vegetables. A hearty, creamy stew that is particularly prized in Germany during the cold months as warming home cooking.

Place the yellow split peas in a bowl, cover with plenty of cold water and soak overnight (at least 8 hours). The next day, drain and rinse.
Cut the smoked pork into bite-sized pieces. Peel and finely dice the onion. Peel the carrots and slice them. Peel the potatoes and celeriac and cut into even dice. Trim the leek and slice into rings.
Melt the butter in a large saucepan over medium heat. Sweat the diced onion until translucent, about 3 minutes. Add the carrot slices and celeriac dice and fry briefly.
Add the soaked peas to the saucepan and pour in the water. Add the bay leaves. Nestle in the smoked pork. Bring to the boil, then reduce the heat and simmer gently over low heat, partially covered, for about 45 minutes.
Add the diced potatoes and leek rings to the stew. Simmer over low heat for a further 20 minutes, until the potatoes are cooked through. Stir occasionally to prevent anything from catching on the bottom.
Remove the pork from the saucepan, pull the meat from the bones and shred into pieces. Return to the stew. Season with salt, pepper and marjoram. Remove the bay leaves.
