Stir the lukewarm milk with the yeast and 1 tsp sugar from the dough portion and leave to stand for 10 minutes until the mixture is lightly frothy.
Place the flour, remaining sugar, salt, egg, softened butter and yeast-milk mixture in a bowl and knead with the dough hooks of an electric hand whisk or by hand until a smooth, elastic dough forms.
Cover the dough with a cloth and leave to rise in a warm place for 45–60 minutes, until it has noticeably increased in size.
Wash the plums, pat dry, halve and remove the stones.
For the crumble topping, mix the flour and sugar in a bowl, add the cold butter in cubes and rub in with your fingertips to form coarse crumbs.
Line a baking tray with baking parchment. Roll out the dough thinly on a floured surface and place on the tray, pressing up a small edge around the sides.
Place the plum halves cut-side up, close together, on the dough. Sprinkle evenly with sugar and cinnamon.
Scatter the crumble topping evenly over the plums.
Bake in a preheated oven at 180 °C conventional for 35–40 minutes, until the crumble topping is golden brown. Remove and leave to cool on a wire rack for 15 minutes.
