A traditional Turkish börek made by placing white cheese and parsley between paper-thin layers of yufka, baked until golden in the oven. The layer upon layer of yufka are soaked with butter and a yoghurt sauce, the cheese filling meets in the middle, and it bakes until crisp and golden.

Preheat the oven to 180°C. Lightly grease a baking tray or line it with baking parchment.
In a bowl, mix the crumbled white cheese, finely chopped parsley, salt, and black pepper. Set the filling aside.
In a separate bowl, whisk together the yoghurt, sunflower oil, and 1 egg until smooth. Prepare the yoghurt sauce.
Lay the first yufka in the tray, letting the edges hang over the sides. Drizzle with melted butter and the yoghurt sauce, then spread with a pastry brush.
Layer the second and third yufka sheets on top in the same way, soaking each with butter and yoghurt sauce.
Spread the prepared cheese filling evenly over the yufka sheets.
Layer the remaining three yufka sheets on top of the cheese filling, soaking each with butter and yoghurt sauce. Fold the edges of the last yufka over the layers below.
Beat the remaining 1 egg and brush it over the top layer of the börek. Using a knife, cut into squares or diamond-shaped portions.
Bake in the preheated 180°C oven for approximately 35-40 minutes, until golden. Remove from the oven and leave to rest for 10 minutes.
