Preheat the oven to 180°C. Lightly grease a baking sheet or line it with parchment paper.
In a bowl, combine the crumbled white cheese, finely chopped parsley, salt, and black pepper. Set the filling aside.
In a separate bowl, whisk together the yogurt, sunflower oil, and 1 egg until smooth. Prepare the yogurt sauce.
Lay the first sheet of phyllo over the baking sheet, letting the edges hang over the sides. Drizzle with melted butter and the yogurt sauce, then brush evenly.
Layer the second and third sheets of phyllo on top in the same way, brushing each with butter and yogurt sauce.
Spread the prepared cheese filling evenly over the phyllo sheets.
Layer the remaining three sheets of phyllo over the cheese filling, brushing each with butter and yogurt sauce. Fold the edges of the last sheet over the layers below.
Beat the remaining 1 egg and brush it over the top layer of the börek. Cut into portions in a square or diamond shape with a knife.
Bake in the preheated 180°C oven until golden brown, approximately 35-40 minutes. Remove from the oven and let rest for 10 minutes.
