Classic German meatloaf made from a mixture of minced beef and minced pork, with soaked bread rolls, onions and eggs, topped with mustard and bacon strips, baked in the oven until crispy on the outside and juicy on the inside.

Slice the bread rolls and place them in a bowl. Pour over the milk and leave to soak for 10 minutes, then squeeze well with your hands and crumble.
Finely chop one onion and sweat in a pan with butter over medium heat for about 5 minutes. Allow to cool.
Coarsely grate the second onion. Place the minced beef, minced pork, squeezed bread rolls, grated onion, sweated onion, eggs, mustard, salt, pepper, paprika and garlic in a large bowl. Knead with your hands until a uniform mixture forms.
Shape the meat mixture into an elongated loaf about 25 cm long on a floured work surface. Place on a baking tray lined with baking parchment or in a greased loaf tin.
Brush the loaf thinly with mustard and lay the bacon strips crosswise over the top.
Bake in a preheated oven at 180 °C fan for about 60 minutes, until the surface is golden brown and the bacon is crispy.
Remove the meatloaf from the oven and leave to rest for 10 minutes, then slice and serve.
