Preparation

  1. Step 01

    Cut the rolls into slices and pour the milk over them in a bowl. Let soak for 10 minutes, then squeeze well with your hands and crumble.

  2. Sweat in butter over medium heat until translucent.

    Finely chop one onion and sweat in a pan with butter over medium heat until translucent, about 5 minutes. Let cool.

  3. Step 03

    Coarsely grate the second onion. Combine the ground beef, ground pork, squeezed rolls, grated onion, sweated onion, eggs, mustard, salt, pepper, paprika, and garlic in a large bowl. Knead with your hands until a uniform mixture forms.

  4. Step 04

    Shape the meat mixture on a floured work surface into an elongated loaf about 25 cm long. Place on a baking sheet lined with parchment paper or in a greased loaf pan.

  5. Step 05

    Spread the loaf thinly with mustard and lay the bacon strips crosswise over the top.

  6. Bake at 180 °C convection.

    Bake in a preheated oven at 180 °C convection for about 60 minutes, until the surface is golden brown and the bacon is crispy.

  7. Step 07

    Remove the meatloaf from the oven and let rest for 10 minutes, then slice and serve.
