Grate the peeled potatoes on the coarse side of a grater into a large bowl. Peel the onion and grate it finely on the fine side of the grater into the bowl.
Add the egg, flour, salt, pepper and nutmeg to the potato and onion mixture and mix well with your hands until a uniform mixture is formed.
Heat the oil in a large non-stick frying pan over medium to high heat. Using a spoon, place about 2 tbsp of the mixture per potato pancake into the oil and flatten.
Fry the potato pancakes for 3–4 minutes on each side until golden brown and crispy. Drain on kitchen paper and fry the remaining potato pancakes in batches.
Serve the potato pancakes hot with apple sauce.
