Preparation

  1. Boiling

    Peel the potatoes and boil in salted water for approximately 20-25 minutes. Boil the eggs separately in boiling water for 10 minutes, then transfer to cold water and peel.

  2. Sautéing

    Melt the butter in a wide saucepan over medium heat. Add the flour and cook for 1-2 minutes; the flour should turn slightly in colour but not brown.

  3. Mixing

    Gradually add the hot stock to the flour mixture, stirring continuously. Whisk until a smooth sauce is achieved.

    Add the milk and continue stirring. Stir in the mustard and sugar. Simmer the sauce over low heat for 5 minutes, cooking until thickened.

  5. Heating

    Season the sauce with salt and pepper. Halve the boiled eggs and place them in the sauce, heating for 2-3 minutes together with the sauce.

  6. Boiling and serving

    Boil the spinach in boiling salted water for 2-3 minutes, then drain and squeeze out excess water. Slice the boiled potatoes onto a serving plate, place the spinach alongside, and top with the eggs in mustard sauce. Serve hot.
