Preparation

  1. Boiling

    Peel the potatoes and boil in salted water for about 20-25 minutes. Boil the eggs in a separate pot in boiling water for 10 minutes, then transfer to cold water and peel.

  2. Sautéing

    Melt the butter in a wide saucepan over medium heat. Add the flour and cook for 1-2 minutes; the flour should turn slightly golden but not brown.

  3. Mixing

    Gradually add the warm stock to the flour mixture, stirring constantly. Whisk until you have a smooth sauce.

    Add the milk and continue stirring. Stir in the mustard and sugar. Simmer the sauce over low heat for 5 minutes, until thickened.

  5. Warming

    Season the sauce with salt and pepper. Halve the hard-boiled eggs, place them in the sauce, and warm for 2-3 minutes.

  6. Boiling and serving

    Boil the spinach in boiling salted water for 2-3 minutes, drain, and squeeze out excess water. Slice the boiled potatoes onto a serving plate, arrange the spinach alongside, and top with the eggs in mustard sauce. Serve hot.
