Top and tail the fresh green beans and remove the strings. Cut any long ones into two or three pieces. Wash and drain.
Slice the onions thinly into half-moons. Peel the tomatoes and dice them. Finely chop the garlic.
Add the olive oil to a wide, deep pan and heat over a medium heat. Add the sliced onions and sweat for approximately 5 minutes until translucent.
Add the chopped garlic and cook for about 30 seconds until fragrant.
Add the diced tomatoes, sugar, salt and black pepper. Cook for approximately 5 minutes until the tomatoes have softened and formed a sauce.
Add the drained beans to the pan and toss with the tomato sauce. Pour in the hot water. Cover the pan with a lid.
Reduce the heat and cook on a low heat for approximately 30–35 minutes until the beans are tender but still slightly firm. Check occasionally, adding a little more hot water if needed.
Remove the pan from the heat and let it rest, covered, until it reaches room temperature. Serve at room temperature or chilled.
