    Melt the butter in a wide pan over a medium heat.

    Add the finely sliced pointed peppers and cook for 3-4 minutes until softened.

    Add the diced tomatoes. Cook for approximately 7-8 minutes until the tomatoes have reduced and reached a sauce-like consistency.

    Add the salt, chilli flakes and black pepper, and stir.

    Lightly beat the eggs in a bowl and pour them over the tomato mixture.

    Stir the eggs gently with a wooden spoon until soft and slightly saucy. Remove from the heat within 2-3 minutes. The eggs should not be overcooked; they should remain creamy.
