In a bowl, mix the white wine vinegar, sunflower oil, caraway seeds, salt and pepper.
Add the sliced onions to the marinade and mix well to coat them. Leave to rest at room temperature for at least 30 minutes.
Place the Handkäs cheeses on a serving plate. Pour the marinade and onions over the cheeses. Serve with slices of dark bread.
