Sift the flour into a large mixing bowl. Make a well in the centre, then add the eggs, salt, and oil. Gradually add the lukewarm water, kneading to form a soft, non-sticky dough (for approximately 8–10 minutes).
Divide the dough into 8 equal pieces. Roll each into a ball, cover with a damp cloth, and leave to rest at room temperature for 30 minutes.
Combine the crumbled white cheese, chopped parsley, and black pepper in a bowl. Set the filling aside.
Bring a large pot of water to the boil and add the salt. On a floured work surface, roll out one piece of dough as thinly as possible with a rolling pin (approximately 1 mm). Boil the rolled pastry sheet in the boiling salted water for 10–15 seconds, lift out with a slotted spoon, rinse briefly in cold water, and lay flat on a clean cloth. Repeat with all the remaining pieces of dough.
Grease a 32 cm round baking tray with some of the butter. Place the first pastry sheet in the tray, allowing the edges to hang over the sides. Brush with melted butter. Lay the second sheet on top and brush with butter again. Lay the third sheet on top and spread half of the cheese filling evenly over it.
Lay the fourth sheet over the filling and brush with butter. Lay the fifth sheet on top and spread the remaining cheese filling evenly. Lay the sixth sheet on top and brush with butter. Lay the seventh sheet on top.
Place the eighth (final) sheet on top. Fold the overhanging edges of the first sheet inward to enclose the pastry. Brush the top with beaten egg and drizzle over the remaining melted butter.
Bake in a preheated oven at 180°C for approximately 35 minutes, until the top is golden. Remove from the oven and leave to rest for 15 minutes. Cut into squares or triangles and serve.
