One of the most elegant and labor-intensive böreks in Turkish cuisine, made by boiling paper-thin hand-rolled yufka in salted water, layering them with cheese, and baking until golden. A traditional masterpiece with a soft, layered, and buttery texture.

Preparation

  1. Step 01

    Sift the flour into a large mixing bowl. Make a well in the center, add the eggs, salt, and oil. Gradually add the lukewarm water and knead until you have a soft, non-sticky dough (approximately 8-10 minutes).

    Divide the dough into 8 equal balls. Shape each into a ball, cover with a damp cloth, and let rest at room temperature for 30 minutes.

  3. Step 03

    Combine the crumbled white cheese, chopped parsley, and black pepper in a bowl. The filling is ready.

    Bring a large pot of water to a boil and add the salt. Roll out one dough ball on a floured work surface with a rolling pin as thin as possible (approximately 1 mm). Boil the rolled-out yufka in the boiling salted water for 10-15 seconds, remove with a slotted spoon, rinse under cold water, and lay on a clean cloth. Repeat for all the dough balls.

  5. Step 05

    Grease a 32 cm round baking pan with some of the butter. Place the first yufka in the pan so that it overhangs the edges. Brush with melted butter. Lay the second yufka on top, brush with butter again. Lay the third yufka on top and spread half of the cheese filling evenly over it.

  6. Step 06

    Lay the fourth yufka over the filling, brush with butter. Lay the fifth yufka on top, spread the remaining cheese filling. Lay the sixth yufka on top and brush with butter. Lay the seventh yufka on top.

  7. Step 07

    Lay the eighth (last) yufka on top. Fold the overhanging edges of the first yufka inward to seal the börek. Brush the top with beaten egg and drizzle with the remaining melted butter.

  8. Baking

    Bake in a preheated 180°C oven for approximately 35 minutes, until golden on top. Remove from the oven and let rest for 15 minutes. Cut into squares or triangles and serve.
