Wash the curly kale, trim off the tough stems and roughly chop the leaves. Peel and finely dice the onions. Cut the bacon into small dice.

A traditional northern German winter dish from Oldenburg and Bremen: curly kale is braised with smoked Kassler and Pinkel sausage until buttery soft. Served with boiled potatoes and medium-hot mustard.

Wash the curly kale, trim off the tough stems and roughly chop the leaves. Peel and finely dice the onions. Cut the bacon into small dice.
Render the diced bacon in a large casserole pot over medium heat. Add the onions and cook until translucent, about 5 minutes.
Add the chopped kale to the pot in batches and wilt, stirring occasionally. Deglaze with the vegetable stock.
Place the whole piece of Kassler on top of the kale. Cover the pot and braise over low heat for 60 minutes, stirring occasionally.
Place the potatoes in a separate pan of salted water and cook for about 20 minutes until tender.
Prick the Pinkel sausages several times with a fork and place them on top of the kale. Cook for a further 25 minutes over low heat.
Remove the Kassler and slice it. Season the kale with butter, sugar, salt and pepper. The kale should be buttery soft.
Drain the potatoes. Arrange the kale on plates, top with sliced Pinkel and Kassler, place the boiled potatoes alongside and serve with mustard.
