Traditional northern German winter dish from Oldenburg and Bremen: kale is braised with smoked Kassler and Pinkel sausage until butter-soft. Served with boiled potatoes and medium-hot mustard.

Wash the kale, trim off the tough stems, and coarsely chop the leaves. Peel the onions and finely dice them. Cut the bacon into small dice.
Render the bacon dice in a large braising pot over medium heat. Add the onions and cook until translucent, about 5 minutes.
Add the chopped kale to the pot in batches, stirring until it wilts down. Deglaze with vegetable broth.
Place the whole piece of Kassler on top of the kale. Cover the pot and braise over low heat for 60 minutes, stirring occasionally.
Place the potatoes in a separate pot with salted water and cook until tender, about 20 minutes.
Prick the Pinkel sausage multiple times with a fork and place it on top of the kale. Continue cooking over low heat for another 25 minutes.
Remove the Kassler and slice it. Season the kale with butter, sugar, salt, and pepper. The kale should be butter-soft.
Drain the potatoes. Plate the kale, top with Pinkel slices and Kassler, place the boiled potatoes alongside, and serve with mustard.
