Preparation

  1. Boiling

    Boil the potatoes and cool completely. Cut the cooled potatoes into slices approximately 5 mm thick.

  2. Preparation

    Dice the bacon into small cubes and thinly slice the onion into half-moons.

  3. Frying

    Heat the sunflower oil in a large skillet over medium heat. Add the bacon cubes and cook for 3-4 minutes until the fat renders and the bacon is crispy.

  4. Sautéing

    Add the sliced onions to the skillet and cook with the bacon for 2-3 minutes until the onions are softened and lightly golden.

  5. Frying

    Add the butter to the skillet and melt. Arrange the potato slices in a single layer and fry for 8-10 minutes total, until golden and crispy on both sides. Turn the slices frequently.

  6. Cooking (covered)

    Make 4 small wells in the potatoes. Crack an egg into each well. Cover the skillet and cook over low heat for 4-5 minutes until the egg whites are set and the yolks are cooked to your desired consistency.

  7. serving

    Season with salt and pepper. Serve hot, sprinkled with chopped parsley.
